Tiramisu Meets the Genoise Cake

Today in the kitchen we will have France & Italy battling it out in the ring. The cake & mix are simple and easy to make, should take you, with prep & cooking time, about 2 hours. Genoise cake is a simple and delicious cake from France. It is classic, buttery & quite versatile. For thin cake layers, use the provided measurements, if you would prefer a taller & thicker cake, double the amounts. For two layers, make two cakes, for three layers, make three cakes and so on.

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. vanilla

What’s Next:

Preheat your oven to 350 degrees.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time on high speed until very light and fluffy.

Sift together flour and baking powder, then fold into batter. Stir in vanilla.

Pour batter into a buttered 8″ square cake pan and bake for 20-30 minutes, until light golden brown, and cake begins to pull away from sides of pan.

Mascarpone Mix:

Now here comes the fun part.

Ingredients:

  • 6 egg yolks
  • ¾ cup white sugar
  • 2/3 cup milk
  • 1 ¼ cups heavy whipping cream
  • ½ teaspoon vanilla extract
  • 1 pound mascarpone cheese

What’s Next:

In a large bowl whisk together egg yolks & sugar until well blended, whisk in milk.

In a medium bowl, on medium speed, beat in heavy cream & vanilla until stiff peaks form. Spoon in mascarpone cheese and mix until uniform. Add medium bowl contents to the egg yolk & sugar mixture.

Apply mascarpone mixture to genoise cake in alternating layers, leave enough mix to apply a generous amount to the top. You can add anything from blueberries & blackberries to a chocolate Kahlua sauce, to just plain cinnamon as a topping. Just have fun and be creative!
